Breakfast Broken Down

So you’ve been told to eat a healthy, balanced breakfast – right?

Well.. why?

Let’s breakdown one of my favorites.

Scrambled eggs and arugula sprinkled with salt, pepper, and lemon with whole grain toast, avocado and blackberries

Scrambled eggs - *protein, protein, protein* Eggs are great! They are packed with essential nutrients such as vitamins, folate, zinc, healthy fats AND of course protein. I recommend pasture-raised organic eggs.

Arugula – Full of micronutrients (vitamin K, calcium, iron) and antioxidants that help prevent damage to your cells and reduce inflammation within the body. Embrace the peppery flavor.

Lemon – Just a refreshing sprinkle that supplies your body with vitamin C and helps your body absorb iron (from the eggs).

Whole grain toast – Carbs are essential! They provide the fuel we need to move our bodies – don’t shy away from healthy carbohydrates, optimize performance by choosing whole-grain, high fiber options. I love Ezekiel bread but you choose (just read the ingredients).

Avocado – healthy fats!! Avocados are full of antioxidants, vitamins and minerals. I’d call this a powerhouse food that helps your feel full longer, improves your cholesterol profile, protects your heart, and has plenty of fiber, magnesium, potassium, vitamin E and healthy fats.

Blackberries – Antioxidants, vitamins, minerals and fiber! A common theme here but these compounds protect your body, fuel your brain, and improve gut health.

If this doesn’t convince you, this perfect plate tastes great too. Healthy eating and happy living!
