Tacos for your Tuesday

Save this recipe for healthy (!!) cod fish tacos. They are sure to be a hit.

Ingredients:

  • Tortillas (I recommend Whole Foods organic flour tortillas)

  • Arugula

  • Cod Fish (I recommend Whole Foods Wild Cod - Frozen)

  • Olive Oil

  • Coconut Aminos

  • Jerk Seasoning

  • Salsa (I recommend local fresh salsa)

  • Optional: chopped pistachios to top

Directions:

  1. Heat the tortilla in a skillet until warm, remove and place aside.

  2. Cook the fish:

    1. Add about 1 tablespoon of olive oil to the skillet

    2. Place thawed cod fish in the pan, cover with coconut aminos (roughly 4-6 tablespoons) and top with jerk seasoning (about 1 tablespoon).

    3. Cover fish and let cook for about 3-4 minutes.

    4. Flip fish and let cook on the other side for about 3-4 minutes. By this time the fish should be almost fully cooked through.

    5. Flip one more time to crisp.

    6. You can slice the fish in the pan, it should be flaky and fall apart if done.

  3. Place handful of arugula on the tortilla and top with cooked fish.

  4. Top with salsa and optional chopped pistachios.

  5. Serve and enjoy!
